Cold pressed
The denomination of essential fatty acids for omega-3 and omega-6 arises from the fact that they can not be produced by the organism, their acquisition is exclusively from the diet. In sufficient amounts they can be used to produce the other fatty acids we require. The essential fatty acids are indispensable to the organism and a simple way of acquiring them daily is by the utilization of cold-pressed oils substituting the chemically refined oils which contain trans-fatty acids rather than cis-fatty acids.
When correctly extracted and used, cold-pressed vegetable oils are healthy sources of essential fatty acids. The standard process of industrial refinement alters the essential fatty acids creating high levels of trans-fatty acids, at the same time as removing important elements and natural protecting agents, such as minerals and vitamin E.
As, in nature there are no fats with trans-type links participating in cellular reactions, our organism does not know how to deal with them and they act as a poison in important cellular reactions. The body tries to use them as it would the cis-type and the result is diseased and weakened cells, blocked arteries, malfunctioning of the organism, a drop in resistance creating an increased susceptibility to diseases.
The use of cold-pressed oil is a guarantee in the conservation of its cis-cis isomeric state and consequently, all its therapeutic properties, whether in the diet, in cosmetics or even in veterinary products.
Thus, cold press is not an additional attribute but a basic requisite for the acquisition of healthy functional oil.
Beware of adulterated oils

The completely natural whole oils obtained by a single cold pressing have prices more in keeping with their cost. They guarantee their source from a single extraction from the raw material without the addition of products that increase profits but cause a loss of integrity and bioactivity of the product. Chemical additives or high temperatures should not be used in their production nor should the re-use of raw materials be, thereby preserving the cis essential fatty acids. Refined or blended oils do not possess functional properties. This is easily proved by chemical analysis of the composition of the fatty acids in a competent laboratory.
It is necessary to remember that along with heat, light and oxygen also provoke serious damage to cold-pressed oils. For this it is important to buy unrefined oils sold in lightproof airtight bottles. Fatty acids: From a chemical point of view, fatty acids are straight hydrocarbonate chains joined by simple and double links presenting, at one end, a carboxyl grouping and at the other, a methyl grouping. The presence of a link (monounsaturated) or two links (polyunsaturated) confer the unsaturated property as the name suggests.
Unsaturated essential fatty acids produce special beneficial effects for the entire living organism. Saturated fatty acids present with only simple links on the hydrocarbonate chain conferring greater stability at high temperatures, and therefore, resistance to common extraction processes.
Essential fatty acids: Omega-6 (N-6) and omega-3 (N-3) are considered essential due to the presence of a double link on the 6th and 3rd carbon, respectively. The N-6 and N-3 fatty acids present a series of metabolites, although only linoleic acid, which is the initial compound of omega-6, and alpha-linolenic acid, which is the initial compound of the omega-3 series are considered to be essential.
Cis-fatty acid: This is the natural and biologically active molecular form of unsaturated fatty acids. In this form, the double and unsaturated links of the molecule are capable of rapid interaction with other molecules.
Trans-fatty acids: This is the biologically inactive molecular form of unsaturated fatty acids, even of the essential fatty acids.
